This washed lot comes from the Chiapas region of southern Mexico, grown at altitudes between 900 and 1100 meters above sea level. A blend of Bourbon, Caturra, Typica, and Catuaí varieties, it reflects the region’s diversity of cultivars and its growing potential for producing coffees of remarkable depth and balance.

We’ve roasted it to a medium level to develop a round sweetness while preserving the subtle fruit and acidity that give this coffee its complexity. In the cup, you'll find rich caramel notes layered with dried fruit—particularly prune—and a silky texture that makes it both comforting and intriguing.
